Fruited Black-Eyed Pea Salad
2 cans (15 oz ea) rinsed and drained Black-eyed Peas (or 3 cups home prepared)
1 cup frozen Corn, thawed (rinse in sieve under warm water)1 cup diced Celery
3 Scallions, minced
2 Apples, chopped
1 can (11 oz) Mandarin Oranges, drained
toss with dressing:
1/2 cup Fat Free or Regular Simply Greek Dressing (from June 3)
1 teaspoon sugar
Chill, Toss & Serve
