Vegan Pancakes from All Purpose Baking Mix

Vegan Pancakes from All Purpose Baking Mix
It's easy to make traditional American Pancakes from an All-Purpose mix like Bisquick or its store
brand equivalent, but still make them vegan.

I first tried this method when we were unable to get my usual whole-wheat, but had Bisquick on hand from a children's cooking project. I now make them regularly.

They turn out tasty, fluffy, and don't taste a bit like "health food!" No exotic ingredients required, just the mix, water and applesauce. (you can use non-dairy milk if you prefer)

I've used both Bisquick and Walmart's Great Value All Purpose Baking Mix - and they both work great. Just make sure you pick a mix that is vegan. You can double-check the ingredients at the provided links:

This is what you do:

In a mixing Bowl, combine just three ingredients

2 Cups Baking Mix (stir with a fork to remove large lumps before adding liquid)

1 Cup Water (or Non-Dairy Milk)

1/2 Cup Applesauce

Stir, and make as you normally make pancakes.

I make mine in a preheated nonstick skillet or griddle, with a light spray of oil.

 Enjoy!
